Webb deVlam recently hosted another instalment of our unique Food for Thought event in Chicago, following the success of our Spring event in London.

Held at R5, Webb deVlam’s insight and innovation lab, the original event was given a whole new twist. We delivered an interactive evening full of inspiration, discovery and lively discussion.

Head of Strategy, Sheri Harris, spoke about emerging developments in the landscape and culture of eating. Rather than focus on flash-in-the-pan trends, she looked further ahead to the changes that are set to make an everlasting impact in the category. Plates, palates and practices are all going to be influenced, and Sheri’s talk explored the changes to anticipate in both business and consumer behaviour.

We curated speciality flavour stations to encourage guests to explore and discover the trends and tastes of the future. Some demonstrated raw and veggie-forward trends, including ‘Edible Elegance’ which looked at pure and delicious ingredients that also pack a beauty boost. Others showcased alternative proteins such as ‘Buggin’ Out’, which featured a delicious array of insects!
